Easy Gluten Free Oat Cookies (Allergy Friendly, Vegan, Soya Free, Nut Free)

Hello again! I have been experimenting in the kitchen a lot, and I have at least twelve recipes to share. I have also been working on some posts about other allergy things...so keep tuning in as I am writing them all up over the next few days.

My sister, Princess M has made her first ever recipe! Mum helped her, but Princess M did all of the making herself. So this recipe is really on her behalf!

Here are the ingredients to make about 12-14 mini cookies. You could double the mixture to make more, or to make bigger cookies :

  •     150g Gluten Free Oats
  •     100g (one pot) Apple and Pear Puree
  •     3 tsp Agave Syrup
  •     (optional extras could be raisins, a sprinkle of cinnamon, or allergy-friendly chocolate drops)
  1. First, mix it all in a big mixing bowl until it has a doughy texture
  2. Leave it to soak the liquid into the oats, for about fifteen minutes at room temperature.
  3. Next, roll the mixture into little balls.
  4. Place them on a baking tray that has been lined with greaseproof paper
  5. Gently pat the cookie balls into a flatter shape - but not too thin.
  6. Now, put into the oven for 10 to 15 minutes until golden brown. The cookies will still be soft, but they will harden a little as they cool down.
  7. Finally, leave them to cool before eating them!
Hope you enjoy trying Princess M's first ever recipe!

Love from Princess E! x
