Easy Peasy Allergy-Friendly Couscous Salad.

Today I am going to show you how to make couscous salad that is free from all major allergens, if you use maize couscous instead of durum wheat couscous.




You need:

  • A packet of plain dry couscous (you can use ordinary couscous, or gluten/wheat free).
  • Light coloured stock to suit your allergies - we use a vegetable celery-free version that you can buy in the health-food shop.
  • Dairy-free Vitalite (or your butter alternative)
  • Tomatoes - we like cherry or plum types.
  • Olives
  • Cucumber
  • Spring onions
  • Pine nuts if you want to add some crunchiness. (Pine nuts are actually seeds, not nuts.Most nut-allergic people can eat them safely, but please check with your allergy doctor).
Now I will tell you how to make it.
  1. First add equal amounts of couscous and freshly made hot stock into a cup or a jug. You can use a measuring cup for this on a ratio of one cup of each, or more. 
  2. Now add a generous spoonful of you dairy free butter alternative to your mixture and use a fork to mix it up and make it fluffy.
  3. Next halve your cherry tomatoes to add to the salad.
  4. For the cucumber slice into whole circles, then cut into quarter segments.
  5. After this, cut your spring onions into small slices and add to the mixture.
  6. Halve your olives to add in to the salad.
  7. Toast the pine nuts by adding a little of your butter alternative to a pan, and stir them over a medium heat for a couple of minutes. Get your Mum or Dad to do this if you need to, as it is hot!
  8. Sprinkle toasted pine nuts on top.
  9. Finally stir well  and serve .
