Vegan Chocolate Cake - by Princess E :-)

Hi welcome  back! I hope you enjoyed our last recipe, banana muffins! Today I am going to show you how to make crazy chocolate cakes! Here are the ingredients.




  • 210g  of plain flour (this recipe can be adpated to gluten free by using gluten free flour that has xantum gum included in the mix - or by using the gluten free flour and also adding your xanthum gum).
  • 200g of caster sugar
  • 3 tbs cocoa powder
  • 1 tsp of bicarbonate of soda
  • half a tsp of salt
  • 1 tsp of vanilla
  • 1tsp of vinegar
  • 5 tbs of vegetable oil 
  • 250 mls of cold water
Here is what you need to do.
  1. Sieve the plain flour and cocoa powder into a bowl.
  2. Stir with the rest of the dry ingredients.
  3. Make three wells in the mix.
  4. Add vanilla to one well, vinegar to another, and oil to the last well. I made a smiley face in mine!
  5. Pour the cold water over the whole mixture and stir well.
  6. Put in a cake tin and cook for about 25 to 30 minutes.
  7. It's also very tasty!
  8. Plus don't forget to lick the bowl!






Allergy Mummy here again. The cake was cooked at 180 degrees, in a fan oven. We have also previously used this recipe to make muffins, just reduce the cooking time slightly if you do. Princess E likes to decorate her cakes with allergy-friendly icing and sprinkles. We make chocolate icing using 110g dairy free butter alternative (we use dairy free vitalite), 170g icing sugar and 55g cocoa powder. We mix this in a bowl until it goes smooth, and then use it to top the cake. For the sprinkles, we just scour the supermarket shelves until we find any that are suitable for her individual allergy requirements.
