Banana Muffins - A Post From Princess E!

I'm Princess E. I have a little sister called Princess M and a mummy and a daddy. I have a lot of allergies, like dairy, eggs and soya, and lots more, but I can still make yummy recipes!

I like making banana muffins here is the recipe.

Banana Muffins

You need

  • 3 bananas
  • 4oz sugar
  • 1 tsp baking powder
  • 2oz melted butter alternative- we use dairy free vitalite
  • 6oz self raising flour 
Instructions
  1. Mash sugar and bananas.
  2. Melt the butter in the microwave for a few seconds. Be careful as it can get very hot very quickly!
  3. Add melted butter to the banana mix and stir.
  4. Add flour and baking powder and stir.
  5. Put in muffin tins and cook at 180 degrees. 


They are very yummy!


(Allergy Mummy here - just to say that these muffins are very versatile, and can be frozen, ready for emergency allergy parent nightmares when you suddenly need cake at short notice! They can be iced, for a sweeter treat, but don't freeze them with icing on. We also add a handful of raisins and a pinch of cinnamon sometimes, as above, to make a 'breakfast muffin'. They take around 20 minutes to cook, but the time will depend upon how big the muffins are.)

Hi Princess R! Thank you for getting your Mummy to comment here! All of my recipes will be milk and soya free, and probably beef free too, as my Mum is vegetarian!Lots will be tomato free too. Princess M can't eat tomato either. I have some savoury recipes coming up soon that you might like too. Love from Princess E! xxx
